method
- Preheat oven to 180°C (fan forced). Add the diced apple to the KiddoKook Pro steamer basket and steam for 15 minutes, then set aside to cool.
- In a small saucepan, heat the butter, honey, sultanas, and orange juice until gently simmering. Reduce the heat and let it simmer for 5–10 minutes. Transfer to a bowl and allow to cool completely.
- Once cooled, add the egg and milk to the fruit mixture. Fold in the plain flour gradually, adding half at a time. Add the baking powder to the mixture. Stir in the mixed spice, then fold in the steamed apple.
- Spoon the mixture into your PureePops Tray to make 9 mini muffins, or divide into 6 regular muffin tins. Bake for 12–15 minutes, or until cooked through. Allow to cool fully.
- Add the cream to the KiddoKook Pro blending basket. Blend on Auto for 20–30 seconds, stopping as soon as the cream thickens (do not overwhip). Transfer to a piping bag.
- Prepare the strawberries by removing the green tops so they sit flat. Pipe a swirl of whipped cream onto each cooled muffin, place a strawberry on top, and finish with a tiny dot of cream to create the Santa hat.
