A sweet little Christmas treat! These Mini Christmas Fruit Cakes are soft, gently spiced, and naturally sweetened with apple, honey, and sultanas. Topped with fresh strawberries and a dollop of whipped cream, they’re a fun and festive bake for little hands.

  1. Preheat oven to 180°C (fan forced). Add the diced apple to the KiddoKook Pro steamer basket and steam for 15 minutes, then set aside to cool.
  2. In a small saucepan, heat the butter, honey, sultanas, and orange juice until gently simmering. Reduce the heat and let it simmer for 5–10 minutes. Transfer to a bowl and allow to cool completely.
  3. Once cooled, add the egg and milk to the fruit mixture. Fold in the plain flour gradually, adding half at a time. Add the baking powder to the mixture. Stir in the mixed spice, then fold in the steamed apple.
  4. Spoon the mixture into your PureePops Tray to make 9 mini muffins, or divide into 6 regular muffin tins. Bake for 12–15 minutes, or until cooked through. Allow to cool fully.
  5. Add the cream to the KiddoKook Pro blending basket. Blend on Auto for 20–30 seconds, stopping as soon as the cream thickens (do not overwhip). Transfer to a piping bag.
  6. Prepare the strawberries by removing the green tops so they sit flat. Pipe a swirl of whipped cream onto each cooled muffin, place a strawberry on top, and finish with a tiny dot of cream to create the Santa hat.
