Cheesy pumpkin and broccoli muffins

        These savoury muffins are a clever way to pack veggies into a snack that even picky eaters will enjoy! Sweet pumpkin purée and tender broccoli are blended with melty cheese and baked into little grab-and-go bites perfect for breakfast, lunchboxes, or mid-day snacks.

method
- Preheat oven to 170 degrees, fan-forced setting.
 - Dice pumpkin, chop broccoli, and slice spring onion.
 - Steam pumpkin for 15 minutes - set aside.
 - Steam broccoli for 7 minutes - set aside.
 - Blend pumpkin until smooth, add steamed broccoli and pulse until you get a consistency you like: more or less chunky.
 - Add mixture to a bowl and crack in eggs. Beat until all combined.
 - Add in cheese and remaining ingredients. Mix well. Spoon mixture into prepared muffin tray.
 - Bake at 170 degrees for approximately 15 minutes.
 
Makes 9 mini muffins using the PureePops Tray. Would make 6 regular-sized muffins if using a regular muffin tin.
