Cheesy pumpkin and broccoli muffins

These savoury muffins are a clever way to pack veggies into a snack that even picky eaters will enjoy! Sweet pumpkin purée and tender broccoli are blended with melty cheese and baked into little grab-and-go bites perfect for breakfast, lunchboxes, or mid-day snacks.

  1. Preheat oven to 170 degrees, fan-forced setting.
  2. Dice pumpkin, chop broccoli, and slice spring onion.
  3. Steam pumpkin for 15 minutes - set aside.
  4. Steam broccoli for 7 minutes - set aside.
  5. Blend pumpkin until smooth, add steamed broccoli and pulse until you get a consistency you like: more or less chunky.
  6. Add mixture to a bowl and crack in eggs. Beat until all combined.
  7. Add in cheese and remaining ingredients. Mix well. Spoon mixture into prepared muffin tray.
  8. Bake at 170 degrees for approximately 15 minutes.

Makes 9 mini muffins using the PureePops Tray. Would make 6 regular-sized muffins if using a regular muffin tin.

Let muffins cool completely after baking. Because they contain cheese and vegetables, they should be stored in an airtight container in the refrigerator.

A savoury muffin with cheese will stay fresh for up to four days in the fridge. Place a paper towel on the bottom and top of the container to absorb excess moisture.

For longer storage, place cooled muffins in a single layer in a freezer‑safe bag and freeze for up to three months.

Thaw at room temperature or warm gently in a low oven, 10 mins steam cycle in the KiddoKook Pro, or microwave before serving.

tips

To control texture: Steam pumpkin and broccoli separately so they cook evenly, then purée or pulse to your child’s preferred consistency (smooth or chunky).
