These Little Monster Pancakes are made with banana, spinach, and a touch of spirulina for that monster-green hue. Perfect for a Halloween breakfast or a fun weekend treat.

method
  1. Blend the wet ingredients by adding banana, egg, milk, spirulina, honey, melted butter, and spinach to the KiddoKook Pro. Select Auto Blend and blend until smooth and creamy.
  2. In a separate bowl, mix together the flour, oats, and baking soda.
  3. Pour in half of the wet mixture into the dry mixture and stir gently. Add the remaining wet mix and stir again until smooth and lump-free.
  4. Heat a little butter in a non-stick pan. Spoon in the batter to form small pancakes, about three at a time or however many fit comfortably. Cook for 1–2 minutes per side, until lightly golden and crisp at the edges. Makes around 5–6 pancakes, depending on size.
  5. To decorate, place two kiwi slices on each pancake for eyes and top with blueberries. Cut tiny banana “teeth” for mouths and arrange underneath. Have fun creating your little monsters! 👾💚
