Soft, chewy oat cookies with dark chocolate chips and a little applesauce. Easy to make, freezer-friendly and just right for little hands.

  1. Grind rolled oats into oat flour using the KiddoKook Pro. Measure 1 cup of oat flour after grinding, not before.
  2. If making your own applesauce, prepare it first and set aside.
  3. In a large bowl, combine the oat flour, flaxseed, baking soda, salt, coconut sugar and white sugar.
  4. Add the vanilla, oil, applesauce and milk, then mix until a dough forms.
  5. Fold through the chocolate chips.
  6. Roll the dough into 12 balls and place them on a lined baking tray.
  7. Refrigerate for 2 hours, or until the cookie dough balls are firm.
  8. Preheat the oven to 180°C. Gently flatten each ball with the back of a tablespoon.
  9. Bake for exactly 9 minutes. The cookies will still feel very soft when they come out of the oven, but resist the urge to bake them longer. They'll firm up beautifully as they cool.
Storage guide

Store in an airtight container at room temperature for 3–4 days.

For longer storage, freeze in an airtight container or freezer bag for up to 2–3 months. Take one out in the morning and it'll be thawed and ready for the lunchbox by snack time.

For a warm, gooey cookie straight from the freezer, thaw at room temperature or microwave for just a few seconds.

Tips

Oat flour tip: Measure your cup of oat flour after grinding the oats. If you measure the rolled oats first, you'll end up short.

Make your own applesauce: If you've got an apple handy, you can make the applesauce fresh in the KiddoKook Pro before starting the cookies.

Don't overbake them: Nine minutes really is enough! They come out looking almost too soft, then firm up as they cool. That's what keeps the middle lovely and chewy.
