ingredients
method
- Grind rolled oats into oat flour using the KiddoKook Pro. Measure 1 cup of oat flour after grinding, not before.
- If making your own applesauce, prepare it first and set aside.
- In a large bowl, combine the oat flour, flaxseed, baking soda, salt, coconut sugar and white sugar.
- Add the vanilla, oil, applesauce and milk, then mix until a dough forms.
- Fold through the chocolate chips.
- Roll the dough into 12 balls and place them on a lined baking tray.
- Refrigerate for 2 hours, or until the cookie dough balls are firm.
- Preheat the oven to 180°C. Gently flatten each ball with the back of a tablespoon.
- Bake for exactly 9 minutes. The cookies will still feel very soft when they come out of the oven, but resist the urge to bake them longer. They'll firm up beautifully as they cool.
