Beef, kale & sweet potato meatballs

Soft, iron-rich meatballs packed with three veggies and no added salt, suitable from around 9 months and just as good for a hungry four year old.

- Add the kale and spinach to the KiddoKook Pro steamer basket and steam for 10 minutes.
- While the greens steam, brown the onion and garlic in a pan until soft and golden.
- Transfer the onion and garlic to a large mixing bowl with the beef mince, then grate in the nutmeg.
- Squeeze any excess water from the steamed greens, then add them to the bowl.
- Add the diced sweet potato to the steamer basket and steam for 20 minutes, or until soft.
- Transfer the sweet potato to the blending container and use a manual pulse to break it down. You want it roughly blended, not completely smooth.
- Add the sweet potato to the bowl, along with the cheese, egg and oregano. Mix everything together with a spoon until well combined.
- Preheat your oven to 200°C. Roll the mixture into small meatballs and place them on a lined baking tray.
- Bake for 15 to 20 minutes, until cooked through and still juicy in the middle. Cut one open to check there is no pink remaining.
- Let the meatballs cool to a safe temperature before serving. Makes approximately 18 small meatballs.
